Prof. Jarlei Fiamoncini, PhD.
Principal Investigator
Graduated in Biological Sciences and completed his doctorate (2011) at the Institute of Biomedical Sciences, University of São Paulo (USP). Jarlei worked at the Technical University Munich (Germany) and INRA (France) as post doc. In 2018, joined the School of Pharmaceutical Sciences at USP, as an Assistant Professor and group leader.
Apart from his passion for nutritional physiology, he is happy discovering places of untouched nature, visiting art exhibitions and enjoying good food.

Carlos M. Donado-Pestana, PhD.
Post-doctoral researcher
Post-doctoral researcher at the Food Research Center (FoRC) and at the School of Pharmaceutical Sciences at the University of São Paulo (FCF-USP). PhD and MSc. in Food Science (USP). Agroindustrial Engineer from the Universidad Pontificia Bolivariana (Colombia). My doctoral work explored the functionality of bioactive compounds found in Brazilian native fruits on the management of obesity and its associated complications. Actually, I am interested in understanding the metabolic adaptations during the postprandial period. Outside of the lab, I enjoy spending time with my family and friends, reading, going to the gym and practice sports (soccer, tennis, badminton). Atlético Nacional/Corinthians/Red Sox Nation fan.

Larissa Rodrigues, MSc.
PhD. student
Master's Degree in Food Science from the University of São Paulo (FCF / USP), Food Technologist and a Science-chemistry degree (UNIFESP), currently doing a PhD in the Department of Food and Experimental Nutrition, Faculty of Pharmaceutical Sciences (FCF / USP), studying metabolism, postprandial inflammation and their relationship with bile acids.

Graduated in Biology and Nutrition from Federal University of Alfenas (UNIFAL-MG). Master in Biological Sciences, Biology of Host-Pathogen Interaction concentration area actually is PhD in the Department of Food and Experimental Nutrition in Univerty of São Pãulo (USP).

Giovanna Moreira Silva
MSc. student
Graduated in Nutrition from São Camilo University, currently pursuing a master's degree at the Faculty of Pharmaceutical Sciences - University of São Paulo (USP). Her research focuses on understanding the role of dietary choices in the postprandial metabolism of women.

Melissa Castellano
PhD candidate
I hold a BSc in Nutrition (UNIP), a BA in Journalism (PUC-PR), and an MSc in Gerontology (EACH-USP). Currently a PhD candidate in Food Sciences – Experimental Nutrition (FCF-USP), where my research focuses on metabolic phenotype alterations in Binge Eating Disorder through metabolomics. Outside the Lab, I am a bookworm, a traveler, and a coffee aficionado.

Wermerson Assunção Barroso
Post-doctoral researcher
Post-doctoral researcher at the Food Research Center (FoRC) and at the School of Pharmaceutical Sciences at the University of São Paulo (FCF-USP). PhD and MSc. in Food Science (USP). Pharmaceutical-Biochemistry from the Federal University of Maranhão (2013). Master's (2016) and doctorate (2019) in Sciences from the Medical Sciences graduate program at the Faculty of Medicine of the University of São Paulo (USP), with a concentration in Inflammatory and Allergic Processes.

Leandro Presenza, MSc.
PhD. student
He graduated in Fisheries Engineering from the Federal Institute of Espírito Santo and M.Sc. in Food Science and Technology from the University of São Paulo. He has experience studying fishery resources, including the characterization of fishing fleets, identification of marine ichthyofauna, development of fish-based products, and utilization of by-products from the fishing industry. He has also been involved in the public management of Brazilian fisheries resources through the Ministry of Agriculture (MAPA). His research focuses on the relationship between fish consumption, nutritional physiology, and dietary benefits. He is interested in discussions regarding the freshwater and seafood product chain.

Marina Robles de Paola

Graduated in Nutrition from the University of São Paulo. Currently, pursuing a master's degree in the Department of Food and Experimental Nutrition at the Faculty of Pharmaceutical Sciences - Univerty of São Pãulo (USP), studying postprandial metabolism, inflammation and their relationship with food choices in women with eating disorders.

João Carlos de Oliveira Borges
Technical training
Bachelor's degree in Biomedicine from Universidade Cruzeiro do Sul, with qualifications in clinical analysis and molecular biology. Master's degree in Health Sciences (Medicine I) from the Institute of Physical Activity and Sport Sciences (ICAFE) at Universidade Cruzeiro do Sul, where I was a CNPq scholarship recipient.
Currently, developing a Ph.D. project studying the supplementation of bile acids on inflammation and metabolism in mices, at the Faculty of Pharmaceutical Sciences of the University of São Paulo (USP).

PhD. student
Graduated in Chemistry from the UNOESTE, with a sandwich period at the School of Science and Technology of the University of Coimbra, Portugal. Ph.D Candidate in Food Science, with emphasis on experimental nutrition at the School of Pharmaceutical Sciences of the University of São Paulo (USP). The research itself evolves the evaluating of the effects of D-limonene supplementation on postprandial lipid metabolism.

Vinicius L. Sousa Diniz, PhD.

Bachelor's degree in Biological Sciences at Cruzeiro do Sul University, Brazil. PhD in Health Sciences, Interdisciplinary Post-graduate Program in Health Sciences, Cruzeiro do Sul University. During his doctorate, he also completed an internship at Curtin University, Perth, Australia, with a FAPESP scholarship. The doctoral project aimed to evaluate the effect of "in vitro" treatment with leptin on the function and metabolism of lymphocytes. Has experience in T lymphocytes, Immunometabolism, exercise physiology, melanoma skin cancer, obesity, and leptin.

Amanda Domingos Vasconcelos

Nutritionist (FMU) and Master's student in Experimental Nutrition at the School of Pharmaceutical Sciences (USP). I am interested in understanding the metabolism of postmenopause women and metabolic adaptations during the postprandial period. Outside the lab, I enjoy spending time with my family and friends, playing video games, going to the gym, and reading books.
